Every ingredient must land inside the tolerance. Closer to the recipe pays up to 1.5x.
Lemon press
Squeeze
Bitterness
Hold to squeeze. Juice keeps coming, but past some point (different for every lemon) the pith turns it bitter. Let go in time. Bitter lemon lowers the pay of drinks that use it, and you can discard the jug if it turned bitter.
Syrup pot
Water temperature
-- °C
Dissolved
Burnt
Add water, turn the stove knob (drag around it, clockwise is hotter) then add sugar and stir by dragging circles over the pot. Heating the water first makes the sugar dissolve faster. Above 80 °C, sugar that is not being stirred sticks and burns; burnt syrup lowers the pay of drinks that use it. Arrow keys change the heat when the picture is focused.
Carbonator
Keg pressure
0.0 bar
Fizz
Fill the keg, then hold the CO2 button to build pressure (the green zone is 4.5 to 6 bar; above 6 the relief valve vents gas, and you still pay for it). The gas dissolves as the pressure holds and uses the pressure up, so pulse the button to keep it in the green zone. Flat soda lowers the pay of drinks that use it, and very fizzy soda foams more when poured.
Dairy
Outlet temperature, target 72 to 78 °C
-- °C
Flush milk tank
Order a truck of raw milk, then turn the pump wheel to push it through the heater into the milk tank. Set the thermostat (drag around the dial, clockwise is hotter) so the outlet temperature stays inside 72 to 78 °C. Faster flow cools the outlet, so more milk per second needs a hotter setting. Too cool and the milk is raw, too hot and it is scalded; both lower the pay of drinks that use it. The heater and the outlet take a few seconds to catch up.
